I'm guessing there is something wrong with your setting (it can sometimes be confusing knowing if you should increase or decrease a value), or with your game/mods. They take long, but not not that much, I have the thrall crafting setting at 0.25 and while I haven't checked the exact time, usually if I place a named thrall, then go do something else for a while, it's finished when I return. Even if I max it out up to 10 or 0 something, I have no idea how many hours you'll have to keep playing for them to be trained if it's a named thrall.
